During summer, I shared some great salad and fish recipes. Summer is all about fresh produce and light meals. But autumn is the epitome of comfort food. Not even winter compares to the need for coziness. There’s something about being so charged with sunshine and good weather during summer that makes you crave a warm and filling meal. By the time September rolls in, all you want to do is make your cozy dishes and eat them on your couch with your legs covered by a blanket. I wish I could do it in Tenerife, but autumn here is an extension of summer, with shorter days and slightly lower temperatures. So please enjoy the coziness for me with these eight Mediterranean fall recipes, inspired by Mediterranean cuisine.
Mediterranean fall recipes you can try at home
1. Mediterranean chicken with rice
A warm, delicious, and healthy meal filled with lean protein and nutritious carbs. It’s one of those recipes you’ll probably want to make on a weekend, as it takes time to cook the rice thoroughly. But once you prepare it, you’ll be glad you invested the time.
2. Cod fish risotto
You might associate risotto with summers in Italy. But when you spend close to an hour next to a hot stove, you definitely understand that it’s a fall recipe. For this risotto, I use cod fish and mushrooms. But if you have access, feel free to substitute store-bought mushrooms with wild ones. It would make the recipe so much more in tune with fall.
3. Salmon with green beans and zucchini
This recipe is perfect for weekdays when you want a nutritious meal but don’t have a lot of time to cook. You only need a nice piece of salmon. It can be either a fillet or a cross-section cut. Eat it with pan-seared green beans and zucchini.
4. Beef stew
Beef stew with Brussels sprouts, bell peppers, and mushrooms – what can be more fall than this? It takes a bit of time to cook the beef until it’s tender, but it’s one of those Mediterranean fall recipes you’ll want to make when it rains outside and you’re craving a delicious and nutritious meal.
5. Roasted chicken
An ultimate classic – oven-roasted chicken. Another weekend and special occasion recipe you should try. I use a special butter spread to make the chicken crispy on the outside and tender and juicy on the inside.
6. Mushroom, tuna, and spinach quiche
I know the picture doesn’t look that great (I forgot to take the photo when I made the quiche, so I had to cut it from a video). But trust me when I say – it’s good. It’s an easy quiche recipe you can make for breakfast, lunch, or dinner.
7. Pork roast
Pork tenderloin or solomillo in Spanish is one of the best pork cuts you can cook. No matter what, it’ll turn out juicy and tender. This recipe doesn’t disappoint, and what makes it even better is the sour, salty mayo sauce.
8. Garlic pasta
At least one pasta recipe has to be on the list. It’s an easy-to-make and delicious Mediterranean fall recipe, and you can make enough of it to eat for 2-3 days. This recipe is a perfect mix of garlic shrimp and creamy, buttery pasta. It takes only a few minutes, but you’ll remember it for a long time.
