Healthy and Tasty Salmon and Green Beans Recipe

What can be a better dinner meal idea than simple salmon and green beans? The recipe has everything you need: lean proteins, omega-3 fatty acids, and fiber. On top of that, it’s a delicious and easy-to-make dish you can enjoy on a weekday. Just bake some crispy dill potatoes or steam rice on the side to complete your dish for when you don’t have time to cook or prepare anything fancy.

This time, I want to share with you my version of honey glazed salmon and green beans recipe. I wanted to make it more Mediterranean, with honey, fresh herbs, and lemon juice, but in the end, I couldn’t say no to salty soy sauce to enrich the recipe with savory flavor.

A step-by-step guide to making salmon and green beans

Step 1: Marinade salmon

Take a salmon fillet and season it with salt and pepper. Then, make a savory and sweet marinade. For this, you’ll need to combine olive oil, honey, grated garlic, soy sauce, and lemon juice.

Brush the marinade onto the salmon and let it marinate for at least 30 minutes. If you want the flavors to soak in better, you can leave it in the fridge for a few hours.

Step 2: Pan-sear the salmon

Heat a large pan where the entire fillet can easily fit. Make sure the pan is hot before placing your salmon in it because otherwise, the skin will stick to the surface of the pan. Pour a bit of olive oil and place the salmon skin-side down in the pan. 

Let it sear for 3 minutes before flipping the piece and frying it for another 3 minutes. When both sides are done and golden brown, take the salmon and put it on the plate.

Step 3: Blanch the green beans

While your salmon is getting crispy and nice, you can blanch the green beans. I like boiling the beans before searing them because they become softer and lose that fibrous texture that can be hard to chew.

Boil them for 5 minutes, take them out of the hot water, and put them into the cold water.

Step 4: Stir fry the green beans and zucchini

Take a new pan and put a spoonful of butter. Let the butter melt before placing the green beans and zucchini slices. Season everything with salt and pepper. Let the vegetables cook on high heat for 3-4 minutes.

Step 5: Make your plate

Place the salmon and green beans on a plate, sprinkle some fresh dill, and squeeze lemon juice. You can eat it with simple white rice or my favorite crispy dill potatoes.

Ingredients
  

  • 1 Large salmon fillet
  • Green Beans
  • 1 Zuchini
  • 1 tsp Honey
  • 2 cloves Garlic
  • 3 tbsp Olive oil
  • 1/4 cup Fresh dill
  • 3 tbsp Soy sauce
  • Lemon juice
  • Salt and pepper

Instructions
 

  • Season the salmon fillet with salt and pepper. Combine olive oil, honey, grated garlic, soy sauce, and lemon juice to make the marinade. Brush the marinade onto the salmon and let it marinate for at least 30 minutes or refrigerate for a few hours for stronger flavor.
  • Heat a large pan over high heat. Add a bit of olive oil to the hot pan. Place the salmon skin-side down and sear for 3 minutes. Flip the salmon and sear for another 3 minutes until both sides are golden brown. Remove the salmon from the pan and set aside on a plate.
  • Boil the green beans for 5 minutes. Remove the green beans from the boiling water and immediately transfer them to cold water to stop the cooking process.
  • In a new pan, melt a spoonful of butter. Add the blanched green beans and zucchini slices to the pan. Season with salt and pepper. Cook the vegetables on high heat for 3-4 minutes until they are tender.
  • Place the cooked salmon and green beans on a plate. Sprinkle fresh dill over the salmon. Squeeze lemon juice over the dish. Serve with simple white rice or crispy dill potatoes.
