Quiche is such a versatile dish. You can eat it for breakfast, lunch, and dinner, and bring it to picnics. You can use many different variations of ingredients, and likely your quiche will turn out just fine.

This time, I wanted to give a simple spinach and mushroom quiche a little twist by adding tuna. Canned tuna fish has a neutral flavor, packs a lot of protein, and gives a nice consistency to a tuna quiche.

Tuna also goes very well with spinach and mushrooms, so you can’t go wrong with this fish.

In this recipe, I’m using a pre-made quiche crust, but you can make this recipe without a crust or bake it from scratch. Below, you can go straight to the recipe or read step-by-step preparation instructions. Enjoy!

How to make quiche recipe: spinach, mushroom, and tuna

Step 1: Cut and prepare your veggies

Chop onions and mushrooms. If you’re using large spinach leaves, you can chop them too. However, since spinach shrinks a lot when cooked, it doesn’t need to be thinly chopped.

Step 2: Cook your veggies

Pour olive oil into a frying pan. When the pan heats up, add mushrooms and let them cook for 2 minutes until they soften. 

Put in the onion and let everything cook until the onion becomes tender.

Once the onion and mushrooms reach the right consistency, add the washed fresh spinach. Don’t worry if it takes up all the space in the pan, as it’ll quickly shrink to basically nothing. When the spinach has shrunk, season everything with salt, pepper, and herbs.

Salt draws the moisture out of the veggies, so you might notice that there’s a lot of liquid gathering. If the liquid doesn’t evaporate, you can drain it carefully into the sink. Try to make the veggies without the liquid because it’ll make the final plate too runny and hard to cook.

Once everything is cooked, add canned tuna. Mix everything well and turn off the heat.

Step 3: Make the egg mixture

Meanwhile, whip up the egg mixture while your veggies are cooking. Crack the eggs into a tall bowl, pour in the cream, add parmesan cheese, and season everything with salt and pepper. Mix everything together until there are no visible lumps of cheese or egg.

Step 4: Prepare the base

Preheat the oven to 180°C (356°F) degrees for 10-15 minutes.

If you, like me, are using a premade quiche crust, spread it evenly onto the oven dish. Make sure it sticks to the walls of the dish. Otherwise, the quiche liquid will go under the base.

Now, evenly spread the cooked vegetables with tuna. Pour the egg mixture onto the veggies and make sure it coats everything evenly. If you’re feeling extra fancy, you can grate mozzarella cheese on top for that golden crust and flavourful texture.

Step 5: Bake the tuna quiche

Bake the quiche for 45-50 minutes in the oven. At the end of this time, insert a toothpick into the quiche to check if it’s cooked through. You can adjust the time accordingly.

Ingredients
  

  • 1 pc Quiche Crust
  • 3 pcs Eggs
  • 200 ml Heavy cream
  • 300 g Fresh Spinach
  • 3 cans Tuna
  • 1/2 cup Parmesan Cheese
  • 1/2 Small Onion
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1/4 cup Fresh Parsley
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions
 

  • Chop onions, mushrooms, and spinach.
  • Heat olive oil in a pan, cook mushrooms for 2 minutes, then add onions and cook until tender. Add spinach, season with salt, pepper, and herbs. Drain excess liquid if necessary. Add canned tuna, mix, and turn off heat.
  • Make the egg mixture. Crack eggs into a bowl, add cream, parmesan cheese, salt, and pepper. Mix until smooth with no lumps.
  • Prepare the base by spreading the quiche crust in an oven dish. Spread cooked veggies with tuna over the crust. Pour the egg mixture evenly.
  • Bake at 375°F (180°C) for 45-50 minutes.

How to make spinach quiche with fresh spinach?

The secret to moist, but not runny spinach tuna quiche, is cooking the spinach beforehand. Cook fresh spinach in a frying pan for a few minutes and season it. Drain the excess liquid or let it evaporate to avoid watery texture.
