How to make beef stew on the stove: step by step

Step 1: Prepare the meat

For the stew, I’m using beef brisket cuts. They’re cheaper and easier to find in most grocery stores. However, they might be a bit hard and chewy if prepared incorrectly. So, stick to the instructions to achieve a tender and juicy texture.

Take your meat, cut it into medium-sized cubes, and pat it dry with a paper towel.

Step 2: Sear the meat

Heat a large saucepan or, in my case, a large frying pan. The cooking dish should be tall enough to fit all the ingredients and liquids. Heat some olive oil and place the beef cubes. Let them cook on high heat for 2 minutes on both sides. Let the sides crisp slightly and remove them from the pan once they’re done.

Step 3: Cook the vegetables

Cut each mushroom into 4-6 cubes. Pour more olive oil into the pan and add the mushrooms. Let them cook for a few minutes. Then add garlic, mix everything together, and let it cook for another minute or two until the aromatics become fragrant.

Then put in the sliced bell peppers and again, let everything cook for a few minutes. Finally, add the Brussels sprouts. I like to boil Brussels sprouts for a few minutes before searing to make them softer, but it’s up to you and the texture you prefer.

Once all the veggies are mixed together, season everything with salt and pepper.

Step 4: Add the beef

Add thyme, rosemary, and chili flakes, then add the meat. Mix everything together and pour in the chicken or vegetable broth. Make sure it covers the meat and vegetables halfway. Let everything simmer on low heat for 20-30 minutes. If you want the beef to be extra tender, you can increase the time and add more broth.

Once it’s done, pour in the heavy cream and mix everything. Taste the sauce to see if you need to add more salt.

Let the cream bubble a bit and then turn off the heat. Add a handful of fresh or dried parsley and Skanaus! Serve it with these crispy dill potato wedges.

  • 400 g Beef
  • 200 g Brussels sprouts
  • 250 g Mushrooms
  • 1-2 pcs Bell peppers
  • 3 cloves Garlic
  • 1 cup Chicken/vegetable broth
  • 150 ml Heavy cream
  • 1 sprig Rosemary
  • 1 tsp Thyme
  • 1/2 tsp Chili flakes
  • Pepper and Salt to taste

Instructions
 

  • Cut the meat into medium-sized cubes. Pat the meat dry with a paper towel.
  • Heat a large saucepan or frying pan. Add olive oil and place the beef cubes in the pan. Cook on high heat for 2 minutes on both sides until slightly crispy. Then remove the beef cubes from the pan.
  • Cut mushrooms into 4-6 cubes and slice bell peppers. Add more olive oil to the pan and cook the mushrooms for a few minutes. Add garlic, mix, and cook for another minute or two until fragrant. Add sliced bell peppers, cook for a few minutes. Finally, add Brussels sprouts and season with salt and pepper.
  • Add thyme, rosemary, and chili flakes to the pan. Mix and add the seared meat. Pour in chicken or vegetable broth to cover meat and vegetables halfway. Simmer on low heat for 20-30 minutes. Pour in heavy cream, mix, and taste for seasoning. Let the cream bubble, then turn off the heat. Finally, add a handful of fresh or dried parsley.
